Ingredients

  • 4 large russet potatoes
  • 1 medium onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Peel and dice the potatoes and onion, then mince the garlic.
  2. Add the potatoes, onion, garlic, and chicken broth to the Crock Pot.
  3. Cook on low for 6-8 hours, or high for 3-4 hours, until the potatoes are tender.
  4. Use a potato masher to partially mash the soup for a creamy texture.
  5. Stir in the heavy cream, shredded cheddar, sour cream, salt, pepper, and paprika.
  6. Cook on low for an additional 30 minutes to allow the flavors to meld.
