Creamy Mushroom Soup with Turmeric & Thyme

A comforting and flavorful creamy mushroom soup with the warm spices of turmeric and thyme.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon ground turmeric
  • 1 teaspoon dried thyme
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, cooking until softened.
  2. Add the sliced mushrooms, turmeric, and thyme to the pot. Cook until the mushrooms are tender.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce the heat and simmer for 15 minutes.
  5. Stir in the coconut milk, and season with salt and pepper.
  6. Blend the soup until smooth, then serve warm.

Notes

  • For extra creaminess, add more coconut milk.
