Creamy Mushroom Chicken and Wild Rice Soup

  • 1 cup wild rice
  • 2 cups chicken broth
  • 1 pound chicken breast, diced
  • 1 cup mushrooms, sliced
  • 1 cup turkey bacon, cooked and chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and garlic, cooking until onions are translucent.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in mushrooms and turkey bacon, cooking for an additional 5 minutes.
  5. Add chicken broth and wild rice, bringing to a boil.
  6. Reduce heat to low and simmer for 45 minutes, until rice is tender.
  7. Stir in heavy cream, thyme, salt, and pepper. Cook for another 5 minutes.

Notes

  • For a vegetarian option, substitute chicken with chickpeas and use vegetable broth.
