- 1 cup wild rice
- 2 cups chicken broth
- 1 pound chicken breast, diced
- 1 cup mushrooms, sliced
- 1 cup turkey bacon, cooked and chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, heat olive oil over medium heat.
- Add onions and garlic, cooking until onions are translucent.
- Add diced chicken and cook until no longer pink.
- Stir in mushrooms and turkey bacon, cooking for an additional 5 minutes.
- Add chicken broth and wild rice, bringing to a boil.
- Reduce heat to low and simmer for 45 minutes, until rice is tender.
- Stir in heavy cream, thyme, salt, and pepper. Cook for another 5 minutes.
