  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1 pound crab meat
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Old Bay seasoning

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.
  2. Stir in diced tomatoes and seafood stock, bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Blend the mixture until smooth, return to pot.
  5. Add heavy cream, crab meat, shrimp, parsley, and Old Bay seasoning.
  6. Simmer for another 10 minutes, stirring occasionally.
  7. Season with salt and pepper to taste, serve hot.

Notes

  • For a thicker bisque, blend a portion of the seafood mixture.
  • Garnish with additional parsley and a swirl of cream before serving.
