Ingredients

  • 4 chicken thighs
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, mix together parsley, olive oil, vinegar, garlic, red pepper flakes, salt, and pepper to create the chimichurri sauce.
  2. Marinate the chicken thighs in the chimichurri for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken thighs for 5-7 minutes per side or until cooked through.
  5. Serve the chicken with extra chimichurri on the side.

Notes
