  • 1 pound chicken breast, diced
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 cups potatoes, cubed
  • 1 cup green beans, trimmed
  • 1 cup corn, frozen or fresh
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion and garlic, cooking until soft.
  3. Add diced chicken and cook until browned.
  4. Stir in carrots, celery, and potatoes, cooking for 5 minutes.
  5. Add chicken broth, thyme, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add green beans and corn, simmering for an additional 10 minutes.
  8. Adjust seasoning as needed and serve warm.
