  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup diced onions
  • 2 cups diced carrots
  • 2 cups diced celery
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups chicken broth
  • 2 cups frozen peas
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until tender, about 5-7 minutes.
  2. Add garlic, thyme, and rosemary. Cook for another minute until fragrant.
  3. Stir in chicken broth and bring to a boil. Add the chicken breasts and cook until they are no longer pink.
  4. Remove the chicken, shred it, and return it to the pot.
  5. Whisk together the flour and heavy cream in a bowl, then gradually add to the soup, stirring until thickened.
  6. Add frozen peas, salt, and pepper. Simmer for another 5 minutes before serving.
