  • 6 slices turkey bacon
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 teaspoon dried thyme
  • 1 cup heavy cream
  • 1 cup frozen pie crust, diced

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the turkey bacon and cook until crispy. Remove and set aside.
  2. In the same pot, add diced onion and sauté until transparent. Add minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a boil. Stir in the shredded chicken and mixed vegetables.
  4. Add thyme and let simmer for 15 minutes, stirring occasionally.
  5. Finally, mix in the heavy cream and diced pie crust. Cook for another 5 minutes until heated through.
  6. Serve hot, topped with crumbled turkey bacon.
