  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/4 cup capers
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Flatten the chicken breasts to even thickness and season with salt and pepper.
  2. Dredge the chicken in flour, shaking off the excess.
  3. Beat the eggs in a bowl and mix in the Parmesan cheese.
  4. Dip the floured chicken into the egg mixture, then back into the flour.
  5. Heat olive oil and butter in a skillet over medium-high heat.
