Chicken Enchilada Soup

Ingredients

  • 1 pound boneless chicken breasts
  • 1 can diced tomatoes
  • 1 can black beans
  • 1 cup corn
  • 1 cup enchilada sauce
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until onion is translucent.
  3. Add chicken breasts, season with cumin, chili powder, salt, and pepper. Cook until chicken is browned.
  4. Pour in diced tomatoes, black beans, corn, enchilada sauce, and chicken broth. Bring to a boil.
  5. Reduce heat and let it simmer for 20-25 minutes, until chicken is cooked through.
  6. Remove chicken, shred it, and return it to the pot.
  7. Stir in shredded cheese until melted.
  8. Serve hot, garnished with your choice of toppings.
