Chicken and Vegetable Soup

A warm and hearty Chicken and Vegetable Soup perfect for any day of the week.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups mixed vegetables (peas, corn, green beans)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Stir in garlic and cook for another minute.
  3. Add chicken breasts, chicken broth, thyme, and oregano; bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes or until chicken is cooked through.
  5. Remove chicken, shred, and return to the pot.
  6. Add mixed vegetables and season with salt and pepper; cook for an additional 5 minutes.
  7. Serve warm.

Notes

  • For extra flavor, add a bay leaf to the broth while simmering.
  • Fresh herbs can be used instead of dried herbs.
