Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the pumpkin puree, brown sugar, and granulated sugar with the softened butter.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, combine the rolled oats, flour, baking soda, cinnamon, nutmeg, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until just combined.
  6. Drop by spoonfuls onto a baking sheet and bake for 12-15 minutes.
