1 cup long grain rice
2 cups chicken broth
1 cup shredded cheddar cheese
1 tablespoon olive oil
1 onion, chopped
1 bell pepper, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
Instructions
In a large skillet, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté until they are soft.
Add the garlic, cumin, chili powder, and salt, and cook for another minute.
Stir in the rice and chicken broth. Bring to a boil, then reduce the heat to low. Cover and simmer for about 18-20 minutes or until the rice is cooked and liquid is absorbed.
Remove from heat and stir in the shredded cheddar cheese until melted.
Serve hot and enjoy your cheesy delight!
