  • 2 cups cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnishing

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add garlic and sauté for 1 minute.
  4. Add cherry tomatoes, zucchini, bell peppers, and red onion. Cook for about 5-7 minutes until the veggies are tender.
  5. Stir in the cooked tortellini, and season with salt and pepper.
