- 4 cups chopped carrots
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 slices turkey bacon, chopped
- 4 cups chicken broth
- 1 teaspoon fresh ginger, grated
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the onions and garlic, sautéing until soft.
- Add chopped carrots and cook for about 5 minutes.
- Pour in the chicken broth, ginger, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes or until carrots are tender.
- Using an immersion blender, puree the soup until smooth.
- Stir in the heavy cream and the reserved turkey bacon. Heat through before serving.
Notes
- For a vegetarian version, omit turkey bacon and use vegetable broth.
- Adjust the seasoning to taste before serving.
