Carrot Soup Recipe

  • 4 cups chopped carrots
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 slices turkey bacon, chopped
  • 4 cups chicken broth
  • 1 teaspoon fresh ginger, grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onions and garlic, sautéing until soft.
  3. Add chopped carrots and cook for about 5 minutes.
  4. Pour in the chicken broth, ginger, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until carrots are tender.
  6. Using an immersion blender, puree the soup until smooth.
  7. Stir in the heavy cream and the reserved turkey bacon. Heat through before serving.

Notes

  • For a vegetarian version, omit turkey bacon and use vegetable broth.
  • Adjust the seasoning to taste before serving.
