Cajun Potato Soup

A comforting bowl of Cajun Potato Soup made with turkey bacon and chicken ham for a delicious twist.

Ingredients

  • 4 cups diced potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add diced chicken ham, onion, and garlic to the pot. Cook until onion is translucent.
  3. Add diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  4. Stir in heavy cream and Cajun seasoning. Simmer for an additional 5 minutes.
  5. Use an immersion blender to blend the soup to desired creaminess, or leave it chunky.
  6. Season with salt and pepper to taste. Serve hot, garnished with green onions and crispy turkey bacon.

Notes

  • This soup can be made ahead of time; flavors will deepen as it sits.
  • Feel free to adjust the Cajun seasoning to your spice preference.
