2 cups cooked chicken, shredded
1 cup BBQ sauce
2 cups shredded cheese (cheddar or Monterey Jack)
4 large flour tortillas
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Instructions
In a bowl, mix shredded chicken with BBQ sauce until well coated.
Heat a large skillet over medium heat and add olive oil.
Place one tortilla in the skillet and sprinkle half of the cheese on one half.
Top the cheese with the BBQ chicken mixture, then add the remaining cheese on top.
Fold the tortilla over and cook for 2-3 minutes until golden brown.
Flip the quesadilla and cook until the cheese is melted and the other side is golden brown.
Remove from the skillet and slice into wedges. Serve warm.
Notes
For extra flavor, add diced onions or bell peppers to the chicken mixture before cooking.
